Il gusto funziona in modo simile per tutti gli esseri umani, ma questo senso, ad un certo punto, si connota più degli altri e ci guida nelle scelte alimentari, molto diverse nello spazio (diverse aree geografiche) e nel tempo (neonati, bambini e adulti). Come mai alcuni gusti piacciono fin da piccolissimi in tutto il pianeta mentre altri impariamo ad apprezzarli solo crescendo? Parleremo del gusto, vedremo quali sono le macchine molecolari che usa e dei suoi cambiamenti (più o meno veloci). Vedremo come vi possono essere differenze tra i vari individui (e tra noi ed alcuni animali) e a cosa sono dovute; parleremo di recettori, ma anche del ruolo della cultura e dell'educazione del gusto come strumento per cambiamenti lenti ma necessari, dato che è cambiato il nostro ambiente alimentare rispetto a quando abbiamo messo a punto questo strumento di conoscenza.
