Una riflessione sugli stratagemmi chimici in campo alimentare che l’umanità, negli ultimi decenni di grande benessere del mondo occidentale, si è inventata pur di, appunto, "mangiare per non mangiare”. Sempre più spesso infatti veniamo a contatto con i cibi cosiddetti “a zero calorie”: alimenti che mimano consistenze o caratteristiche organolettiche attraenti ma che, grazie a additivi particolari, ci danno l’impressione di poterne mangiare di più perché “light”. E non parliamo solo di alimenti dolcificati, ma anche di specie più esotiche e a volte paradossali, come surrogati dei grassi a zero calorie (ma a non-zero effetti collaterali intestinali…) o di spaghetti a base di acqua e gelatina (ma occhio se non vi piace l’odore di pesce marcio). Al di là del racconto delle curiose storie e della chimica dietro questi esemplari, la riflessione finale sarà: ma non è un po’ paradossale, mangiare per non mangiare?
